So their are many armor/weapon sets or whatever available to buy for DOTA 2 heroes, what do these do or what are they for lol. And are they worth it?

THey are just cosmetics (skins) for heros/couriers/minions/wards and such to make them look better or different. Theres a good trading scene and some are worth a good amount. Its like TF2 if you wanna compare items.

Nothing in Dota2 outside the gameplay benefits you ingame. All money purchases are strictly cosmetic.

Why do i see stats on some Greevil couriers? And they have skill too.

Ehm, tf2 items don't change gameplat. Only the weapons, but not the hats, misc ect.
