I have played approx 20 multiplayer games. How long should I stick to limited heroes? I know there is a matchmaking system but if I jump from a smaller pool (limited) to a larger pool (all) will the competition increase beyond my level?

Nope, MM system will do its "best" to pair you with people your level. SO probably people coming out of the limited hero pool as well so there shouldn't anyone dominating too hard.
